What does the cabinet need for a combination steam oven?

Combi-steam ovens (Gaggenau, Miele, Wolf) produce substantial moisture and require a condensate drain or a removable water reservoir. The cabinet carcass directly surrounding the unit should be built from moisture-resistant substrate (marine-grade plywood or moisture-barrier MDF) and finished with a catalyzed lacquer interior. A 1/4" air gap on each side of the unit is standard to allow the cooling fans to exhaust properly.
